Canelés are crafted in an old technique of casting when a molten metal is pored into a mould (containing a beautiful "tree" of canelés from so called wax), replacing the wax which melts and pours out. Similar to their ceramic cousins, bronze caneles undergo many steps including firing, cooling, washing, polishing and triming. In small batches, one at a time in this beautiful old craft where raw materials meet fundamental elements like fire and water.
